Cabbage Salad with Peanut Oil Dressing

3/4 lb Napa cabbage  quartered,  thinly sliced
1/2 lb Savoy cabbage,  thinly sliced
(I’ve used chinese cabbage,  or all Napa)

1 bunch scallions,  julienned
2 Tbs finely chopped mint
1 Tb finely sliced basil (preferably Thai)

1/2 c chopped peanuts

Toss greens and herbs together;  toss with dressing.  Add chopped 
nuts just before serving.

Peanut Dressing
1/4 c roasted peanut oil
2 1/2 Tbs rice vinegar
1 Tbs soy sauce
1 clove garlic,  minced or crushed
1/2 serrano chile,  thinly sliced or 1/2 tsp red pepper flakes
2 scallions thinly sliced
8 mint leaves,  finely chopped
2 Tbs basil,  finely chopped
2 Tbs chopped cilantro
Salt to taste
